Ryan and I both have a sweet tooth.. Since we’ve been trying to eat healthier, sugar is something we don’t use much of anymore unless its a splurge. (That’s what weekends are for ;)) So for those weeknights when we are really craving something sweet I’ll make something low sugar or sugar free. I came up with this recipe one night when we were really craving cobbler but I couldn’t find a recipe ANYwhere that didn’t have at least a cup of white sugar in it. Fruit is so sweet by itself so I don’t understand why that much sugar would be needed anyway! So I use a bit of honey and a little bit of coconut sugar for sweeteners in this recipe which makes it much healthier than your regular cobbler and only 345 calories per serving. (Not including the ice cream!) There are tons of fruit options for this too! You can use apples, peaches, pears, or any type of berry. I used strawberries because I have bags of them in my freezer from my parents’ garden and need to use ’em. Hope you like it!
-2 cups sliced/chopped fruit
-1 tbs. honey
-1 cup whole wheat flour
-1/2 tsp baking soda
-1/2 tsp cinnamon
-1/4 cup coconut sugar (can substitute brown sugar)
-1/2 tsp vanilla
-1/4 cup melted butter
Put fruit in 8×8 baking dish and drizzle honey on top. Mix. In a separate dish mix the dry ingredients. Add wet ingredients and mix. Spoon crust mixture evenly over fruit and bake for 20-30 minutes at 350 degrees.
