Hey y’all! Today I wanted to give you a simple recipe for potato pancakes using leftover mashed potatoes! But first, some random life updates! I feel like I’ve been completely neglecting my blog lately. It is starting to grow (Praise God!) so now is really not the time to be slacking off, but it just so happens to be the busiest time we’ve probably ever had. 😛 Long story short, we were out of town for about a week and a half which threw me off, and now it looks like we will be MOVING soon and working (a lottt) more hours at work which has its ups and downs. I’ve been stressed out to say the least, and I’m not usually one to get easily stressed out! As many of you know, Ryan and I work and live at his parents’ campground in a fifth wheel camper. This season of our lives is coming to an end as our time living in the camper will be over soon. We will be moving into an apartment here at the campground and Ryan is being promoted to manager! (Yay!) But we will both be working some crazy hours which will be a big adjustment for us. So in addition to a new busy work schedule we will be packing, painting, moving, and all that jazz. I know it’ll be hard to keep up with my growing blog, and other things so I’m going to try to get more organized and start planning as many posts as I can in advance (when I have time!) to post on those weeks where I just don’t have the time.
Wish me luck and say a prayer for us if you feel like it. I’m sure all will be fine once we get settled in to our new home and new schedules, but until then life will likely be a whirlwind!
Anyways, back to the purpose of the post- the recipe! I grew up eating “potato cakes” as we called them. My dad made them anytime we had leftover mashed potatoes and we LOVED them. I tried making them on a whim awhile back and they were a major fail so I asked my dad for instructions and this time, they came out perfectly. I’ll include rough directions for any amount of mashed potatoes you might have as well as more precise instructions with actual measurements for those of you that like to follow a recipe to the tea. 😉
Here are the rough instructions I learned from my dad:
-Add eggs to leftover mashed potatoes until its the consistency of thick pancake batter.
-Add enough onions and flour until it is a thin paste-like consistency.
-Heat oil over medium heat and spoon batter onto pan.
-Cook until golden brown on one side, then flip and cook the same on the other side.
-That’s it! Enjoy with a fried egg and some bacon! The topping options are endless though. Let me know your ideas for other toppings in the comments!!
- 2 cups leftover mashed potatoes
- 3 eggs
- 1/2 onion, diced
- 1/4 cup flour (roughly)
- Oil of choice for frying
- Add eggs to mashed potatoes and mix.
- Add diced onions and flour.
- If mashed potatoes are smooth, you're done with the batter! If they are chunky, use a mixer to beat it a little smoother.
- Heat oil in a pan to medium.
- Add spoonful of batter and cook on one side until it starts turning golden brown. Flip and cook the same on other side.
