Hey y’all! I wanted to share another one of my favorite guilt free desserts I like to make! Sugar free peanut butter banana ice cream! Its not true ice cream, but the taste and texture is so similar and would probably fool kids. 😉 Of course I love splurging on real ice cream every now and then, but this stuff is surprisingly delicious too for when you want to be good. 🙂 Its creamy, ice cold, sweet, and full of flavor. Its also really easy!
Start with frozen bananas. I just peel bananas as soon as I buy them and throw them into a freezer bag. Cut them into a few smaller pieces and add them to a food processor. Pulse until they’re broken down a bit.
Once it looks like this, turn it on high and just let it go to town pulverizing the little banana pieces…until it looks like this. I think it looks kind of like graham cracker crumbs.
At this point add in peanut butter, honey, vanilla, and milk and blend until it forms a ball and resembles ice cream! After that you spoon the mixture out and into a freezer safe dish and leave it there until its pretty solid. I usually leave it 40 minutes to an hour.
Then you can scoop it out just like ice cream and enjoy it with some toppings or fresh whipped cream! So Good!!! If you want to have a peanut butter banana milkshake instead, use a blender instead of the food processor and just add more milk to your desired consistency. A few ice cubes help too.
You can make a lot more flavors with the banana ice cream base too! I’ve done strawberry banana, chocolate banana, and chocolate banana peanut butter. Endless options! Let me know if you have any other genius flavor ideas for healthy banana ice cream!
- 4 frozen bananas
- 1/2 cup natural peanut butter
- 2 tbs raw honey
- 1-2 tsp vanilla
- 4 tbs milk
- Puree frozen bananas until they are like sand. Add the rest of the ingredients and puree on high until the texture resembles ice cream. Spoon the mixture into a freezer safe dish and put it in the freezer for about an hour. Enjoy!
